Birthday Cupcakes


No special recipe here... Just showing off. :D



Is there anything more fun to make than fancy cupcakes?



No. The answer is no.



Lily and I made these cupcakes for my amazing Mother In Law's birthday. We have an all day lamaze class tomorrow, and she is kindly watching Lily and Caleb for us on her birthday, so we had to do something special for her! I'm also excited to give her 2 tickets to see the Jersey Boys performing at the Plaza Theatre, I heard it's an amazing show!



In case you're curious what we used to make these:

1 Box Plain White Cake (plus ingredients)

1 Can Whipped Cream Frosting

Fondant: I make my own with marshmallows.

It's the easiest recipe ever:

2 Cups Marshmallows,

2 Tbsp. Water, Microwave for 30 second intervals until you are able to stir it and it's a warm gooey mess without lumps.)

It will be white, but we added 1 Tbsp. Jello Mix to flavor it Strawberry and make it pink. You can leave it white, add food coloring gel, or try another jello mix if you wish. After you've mixed it well (and added any flavors or colors you wish) slowly add 2 Cups Confectioners Sugar. Mix with a spoon until it thickens enough to use your hands. I put crisco on my hands to keep it from sticking. Continue adding the sugar until it's no longer sticky, then shape however you wish! In our case, we went with bows.
